Spring is flying by and summer is just around the corner. For the grape growers in the region it has been a good start to the year with no damaging weather, livestock farmers have been loving the mild winter for grass and good cattle prices although now with a shortage of rain the grass is starting to slow.
This month – Our Featured businesses of the month are tying in with the cycling boom in the South West, a great way to see the region. We have a simple recipe to enjoy for Spring which is always a winner with chicken or ham and sneak peak of events happening late October and November.

The Hairy Marron is a newly-opened business serving coffee down in the Old Settlement overlooking the Margaret River. They are also a trail centre for the surrounding walking and cycling tracks, so visitors can rent bikes and stock up on caffeine before the ride.

Featured Recipe of the Month
This recipe made with Dijon mustard has a distinctive flavor compared to ordinary yellow mustard.
Marinate the chicken overnight to make it more flavorful.
This delicious and easy to make dish is a big plus for the kids and family on the go.

PERFECT PAIR: Baked Honey Mustard Chicken and 2014 Hay Shed Hill Vineyard Series Chardonnay
Baked Honey Mustard Chicken
Prep time: 8 mins
Cook time: 22 mins
Total time: 30 mins
Makes: 4-6 servings
Ingredients:
1½ lbs boneless skinless chicken breasts (about 4 medium)
salt and pepper to taste
3 Tbsp honey
5 Tbsp whole grain or Dijon mustard
1 tsp Worcestershire sauce
Cooking Instructions:
- Preheat oven to 200 degrees centigrade and spray a 9″ x 13″ baking dish with cooking spray.
- Trim and blot chicken breasts dry with a paper towel to remove all moisture from the surface then season both sides lightly with salt and pepper.
- In a small bowl, stir together honey, mustard and Worcestershire sauce until well blended. Spread glaze over the top of chicken and set aside until oven has preheated. You may also allow chicken to marinate in glaze for as long as overnight for increased flavor.
- Bake chicken 20 minutes then remove from oven and spoon sauce from pan back over chicken. Return to oven for an additional 2–6 minutes, depending upon thickness, until chicken is cooked through.
- Remove from oven and allow chicken to rest 5 minutes while glaze thickens. Spoon additional sauce from pan over chicken once again just before serving. Enjoy!
Cleaning Tip: For easier cleanup, line your baking dish with aluminum foil before spraying with oil.
